Ginger Rye Cookies
Ingredients
- 2c rye flour
- 1 t baking soda
- 1/2 t salt
- 2 t ginger
- 3/4 t pepper
- 1/2 t cinnamon
- 1/2 t cardamom
- 3/4c sugar
- 1/2c vegetable oil
- 1 egg
- 1/4c molasses
Optional
- 1/4 c chopped crystallized ginger (reduce ginger)
- 1/4 c honey (reduce sugar)
- 1/4 c brown sugar (reduce sugar)
Recipe
Preheat the oven to 325℉. Parchment paper on two baking sheets.
Mix dry ingredients in one bowl. Mix wet ingredients in order (sugar+oil, then egg and molasses), then mix the dry into the wet.
Roll balls onto sheets, 2" apart.
Cook 12-15 minutes and let cool on the sheet.
Avoid rocks in your rye.
