Rye Crumb Cake
Topping Ingredients
- 1/2 c whole rye flour
- 1/4 c flour
- 1/3 c sugar
- 3 T cocoa
- 1/4 t kosher salt
- 1/4 t espresso powder
- 4 T unsalted butter
Cake Ingredients
- 1 c whole rye flour
- 1/2 c flour
- 1/2 c cocoa
- 3/4 t kosher salt
- 3/4 t baking powder
- 1/4 t baking soda
- 1/2 to 3/4 t espresso powder
- 4 T unsalted butter, at room temperature
- 1/4 c cooking oil
- 1 c sugar
- 1 T vanilla extract
- 2 eggs
- 3/4 c sour cream
- Preheat Oven
- 350℉
- Container
- 9x9"
Recipe
Mix the dry topping ingredients in a medium bowl. Melt the butter. Pour the melted butter over the topping mix until it is crumbed.
Beat the wet ingredients thorougly. Stir in the dry ingredients. Pour into a buttered pan and crumble.
Bake for the shorter of 35-45 minutes.
I use ground coffee beans if I don't have espresso powder.
